Ingredients

  • 7ripe plum tomatoes
  • 1 tbspextra virgin olive oil
  • 1 tbspred wine vinegar or balsamic vinegar
  • 1salt and pepper to taste
  • 1/4 cupolive oil
  • 1baguette french bread or similar itallian bread
  • 1 tbspfreeze dried basil
  • 1 tbspfreeze dried garlic

Steps

  1. 1

    preheat oven to 450

  2. 2

    toss tomatoes in boiling water for one minute.

  3. 3

    remove tomatoes and peel skins off of them.

  4. 4

    quarter the tomatoes and remove the seeds, stem area and the juicey parts.

  5. 5

    chop tomato parts finely.

  6. 6

    mix tomatoes, basil,garlic, oil and vinegar together and add salt n pepper to taste.

  7. 7

    slice baguetteon a diagonal about 1/2 in. thick. coat one side of each slice with oil using a pastry brush.

  8. 8

    place on a cookie sheet,oil side down. bake on top rack until golden. about 5 min.

  9. 9

    place tomato topping on bread slices and serve.

  10. 10

    (u may add motzarella balls to it as well)
