Ingredients

4 servings
  1. for spicy rice
  2. 2 tbspvegetable oil
  3. 1 smallonion, sliced
  4. 1 largegreen chilli ,kept whole but pierced with a knife
  5. 4 clovegarlic, chopped finely
  6. 2 smalltomatoes, chopped
  7. 1 1/2 tspground cumin
  8. 1/3 tspchilli powder
  9. 1/4 tspturmeric
  10. 1 1/2 tspground coriander
  11. 1/3 tspdried mango powder
  12. 1 tspgaram masala
  13. 1 pincheach of salt and pepper
  14. 400 gramsof cooked basmati rice
  15. for warm puy lentils
  16. 300 gramspuy lentils
  17. 2 tbspolive oil
  18. 2fistful of chopped fresh coriander
  19. 4 tspof. dry roasted ground cumin
  20. 5 tbspLemon juice
  21. Goatscheese topping
  22. 4thick slices of Goatscheese
  23. 2fistful of grated cheddar cheese
  24. pepper
  25. 4bell peppers
  26. 2 tbspvegetable oil

Cooking Instructions

    for rice

    heat oil in pan add onions , cook until just browning on edge.Add chilli cook for2-3 minutes, add garlic, cook for one minute add all other ingredients , then add the cooked rice, mix together

    for lentils

    bring the lentils to boil until cooked (you can use the ones in cans).Drain well,add olive oil,coriander,cumin and lemon juice's mix well.

    to Serve

    Cut stem end of pepper, set aside, clean out seeds and the white membrane, fill , but not over fill the peppers, then cover with the top. Cook in a large pot with two tablespoons of oil to which you added a little hot water, steam for about 10-15 minutes until peppers are almost soft be very careful when taking out so that they don't fall apart, discard the tops

    put pepper into heat proof dish top with goatscheese and grated cheddar and bake until pepper is soft and cheese is melted

    serve on top of the warm puy lentils
