Ingredients

  1. 2large hamhocks
  2. 2 packagescrowder peas (young blackeye peas)
  3. 10 cupwater
  4. 1small onion
  5. 2 1/2 tspsalt
  6. 1 1/2 tsppepper
  7. 1red pepper (optional)
  8. 1 handfulwhole frozen okra (optional)

Cooking Instructions

    ** PRESSURE COOKER: put hamhocks in pressure cooker and cover 3/4 with water. (NEVER FILL A PRESSURE COOKER MORE THAN 3/4 FULL OF LIQUID. cut up onion up into slices, put salt and pepper also in cooker. turn fire on high set weight and lid on pressure cooker. once it starts whistling turn it down to medium and let it whistle for 25 minutes. quick release pressure.

    I remove the hamhocks from the cooker AFTER PRESSURE IS RELEASED. the pot should be about 3/4 full. put both bags of crowder peas. turn the fire back to high and allow them to come to a rolling boil. let cook for 10 minutes at a hard boil. (this will help make the 'gravy' on the beans).

    Turn beans down to Med low and let cook for 1 hr with a lid. keep an eye on them to make sure they are not boiling dry.

    Lay the hamhocks on top of the beans, the red pepper, and the okra. let cook for 20 more minutes.
