  • 18 ozblack beans
  • 1big onion
  • 3 clovegarlic
  • 3bay leaf
  • 19 ozpork chop
  • 15 ozsmoked pork sausage
  • 15 ozsmoked bacon
  • Brazilian Farofa
  • 2 ozbread crumbs
  • 1 ozonion
  • 5 ozbacon
  • 1parsley
  • 1salt
  • 1pepper
  • 3 ozbutter
  • Rice
  • 1 ozonion
  • 5 ozrice
  • 1 clovegarlic
  • 3 tbspolive oil
  • orange
  • 6oranges

Steps

  1. 1

    Beans: Wash uncooked beans in water. In pressure a pan, cover beans with water and cook in high pressure for 40 minutes.

    Open the pan and add the chopped bacon, sausage and pork chop. let it cook for 15 more minutes.

    In another pan, put olive oil, chopped onion, bay leaf, and garlic. Saute them for few minutes, than add cooked beans with pork meet.

    Put salt, pepper, and let it cook for 15 more minutes.

    Farofa: in a pan, put chopped onion, butter and chopped bacon. Saute them for few minutes.

    Add bread crumbs, litle by litle, always stiring.

    Then add salt, pepper, chopped parley.

  8. 8

    Rice: Saute chopped onion, garlic, olive oil. Add rice and cook for 1 minute.

  9. 9

    Add water until it covers the rice. Cover with the lid, let a little space for the steam to come out.

  10. 10

    Orange: take of the pell of oranges, and slice it.

    In the plate, put rice, add beans on top. On the side put the Farofa and orange slices.

I like the pressure cooker idea but I prefer to do it the old school way. Low and slow in a big cast iron pot. I also smoke all my meat for 6hours then add everything to one pot having washed and soaked the beans over night.
