Ingredients

  1. noodles
  2. 1/2 kgwide rice noodles
  3. 2 clovegarlic,crushed
  4. 2/3 tbspdark soy sauce or sweet soy sauce
  5. 1/2 tbspeach soy sauce and oyster sauce
  6. soup
  7. 300 gramspork tenderloin,thinny sliced
  8. 1/2 headbroccoli
  9. 250 gramsmushroom of your choice
  10. 1/2 headcarrots
  11. 1 buncheach cilantro and spring onion
  12. 2 clovegarlic ,crushed
  13. 1/2 tbspeach oystr sauce and soy sauce
  14. 1/2 tbspsesame oil
  15. 1 1/2 tbspcornstarch ,dissolve with water
  16. 1egg
  17. 1 1/2 cupwater or stock
  18. seasoning
  19. 1 tbspsoy sauce
  20. 1 tbspoyster sauce
  21. 1 tbspsesame oil
  22. 1/2 tbspsugar
  23. 1/2 tspground black pepper
  24. other
  25. 1oil to fry noodles ,and pork
  26. 1 tbspfermented bean paste ,optional

  1. 1

    Marinate pork with pork seasoning at least 2 hours keep in refrigerator,prepare vegetables

    Prepare wide rice noodles,seperate each bunch(it may come in the thick big bunch ),mix with all noodles ingredients

    Fry noodles in hot pan with one tbsp of oil ,on medium heat when you see the smoke from pan ,char in ..ZzzZZzzz..when it done is when some of noodles look crisp,chared and crushed garlic turn golden,heat off,set aside

    Make the soup ,first stir fry marinated pork with some oil,stir until cooked( add fermented bean in this step if use ),add water or stock ,seasoning and let it boil for 10 mins ,then add prepared vegetables ,5 more mins simmer,add cornstarch mixture ,stir,heat off,

    Serve hot,base bowl with some noodles,ppour hot soup over noodles ,serve with chilli,chilli in vinegar or lime sliced :)

I used veal with vegetable stock and the basic idea is the same. Really enjoyed it-thanks much!
