Jalapeño Pancakes (Appetizer)

Ingredients

2 cuppancake mix
1 1/2 cupwater
2 cup(8 ounces) shredded mozzarella cheese
1 can(4 ounces) diced jalapeño peppers, drained
1ranch salad dressing or salsa

Steps

In a bowl, combine pancake mix and water.

Mix well.

Stir in cheese and peppers.

Pour the batter by heaping tablespoonfuls onto a greased hot griddle.

Turn when bubbles form on top of pancakes.

Cook until second side is golden brown.

Serve warm with dressing or salsa.

This recipe makes about 2 1/2 dozen pancakes.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
