Easy Crockpot Potato Soup

My family LOVES potato soup and this super easy recipe is their favorite. No one ever believes it is hash browns. I've made this recipe with peeled and diced russet potatoes and no one could tell the difference, so I don't spend the time to peel and dice any more! It takes two minutes to throw it in the crock pot.

Ingredients

  1. 130 oz. bag of frozen diced hash browns
  2. 132 oz. box of chicken broth
  3. 110 oz. can of cream of chicken soup
  4. 18 oz. package of cream cheese (not fat-free)
  5. 3 ozreal bacon bits
  6. 1 cupshredded cheddar cheese
  7. 1Salt & pepper to taste

Cooking Instructions

    Put the hash browns in the crock pot. Add the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.

    Cook on low for 7-8 hours or on high for 3-4 hours.

    One hour before serving, cut the cream cheese into small cubes and stir into soup. Once it is melted, it's ready to serve. Top with cheddar cheese and additional bacon bits. Even better if served in a bread boule!
