Ingredients

  1. 1yellow potatoes
  2. 1red potatoes
  3. 1/2velveeta cheese
  4. 1chicken bouillon
  5. 1 cancream of potato soup
  6. 3 tspdehydrated onion or fresh onion
  7. 1salt
  8. 1pepper
  9. 1 dashparsley
  10. 1shredded cheese (colby jack)
  11. 1real bacon bits/pieces
  12. 1/2 cupcorn starch

Cooking Instructions

  1. 1

    cube both kind of potatoes (leave skin or peel)

  2. 2

    boil potatoes with chicken bouillon and onion added, until potatoes are tender (too long will be like mashed potatoes, so watch it)

  3. 3

    drain less than half of the water (allow potatoes to be slightly covered with water)

  4. 4

    place back on stove so it can continue to boil

  5. 5

    separately, mix about half a cup of cornstarch with less than half a cup of cold water (so it is not too watery or pastey)

  6. 6

    pour cornstarch mixture into the boiling potato water

  7. 7

    add cream of potato soup and cubed velveeta

  8. 8

    add salt, pepper, and parsley to desired taste

  9. 9

    serve in a bowl topped with shredded cheese (colby jack) and real bacon bits/pieces
