Ingredients

  • 2Bell peppers
  • 1 lbGround beef
  • 1/2 cupQuinoa
  • 1 cupShredded sharp cheddar cheese
  • 1 tbspOlive oil
  • 1/2 canBlack beans

Steps

  1. 1

    Preheat oven to 375

  2. 2

    Cut peppers in half, clean out seeds

  3. 3

    Lay on cookie sheet and brush inside and outside with olive oil

  4. 4

    Bake until tender

  5. 5

    Brown ground beef. Season with salt and pepper to taste

  6. 6

    Mix cooked quinoa into ground beef along with black beans

  7. 7

    Scoop mixture evenly into peppers

  8. 8

    Top with cheese

  9. 9

    Bake until cheese is melted
