I can't remember where I first had these, the person however told me how to make them, it's a few years ago now. I have recreated them as best as I could as I not wrote down how to exactly make them. I had them as a little canapé, served with a gin and tonic in a shot glass. One eye as the canapé the other in the glass, as shown here.

Ingredients

1 canlychee (about 10 or so pieces in a can)
1small packet of fresh larger blueberries
2 tbspblack currant jam

Carefully remove the lychee from can not to break them

Put a little jam onto a blueberry and pop into the opening of the lychee to make an eye, pierce the blueberry with a toothpick for some juice to escape and use toothpick to make a few streaky blood vessels lines on eye. If you don't want to pierce the eye, use toothpick dip in blackcurrant juice to make the lines either is fine.

Serve with a little green salad as a canapés. No dressing is needed
