Ingredients

  1. 1 cupdates, stones removed (this is approximately half of one those trays of dates. Medjool dates would be especially gorgeous.)
  2. 1 tbspclear honey
  3. 1 1/2 tbspdesiccated (dried) coconut

Cooking Instructions

    In a mini mixer attachment on a stand food processor (or a normal size processor if you are increasing the amounts, or chopped by hand if you have neither) pulse/ chop the dates until they are roughly chopped. You will need to.scrape the sides down a few times.

    Add the honey and mix until it is all sticking together.

  3. 3

    Put the coconut in a wide shallow bowl.

  4. 4

    Use two teaspoons to take teaspoonfuls of the mixture and quenelle them into balls. Drop each one onto the coconut.

    Roll the balls around in the coconut until they are coated in it. If they stick together a bit, just seperate them with your fingers and roll them to coat them in the coconut, at which point they will not stick to each other.

    Serve on a pretty dish.
