Spanish rice with chicken

So delicious, a quick full meal!!:-)

Ingredients

4 servings
  1. rice
  2. 1lb. boneless, skinless chicken breast cut into cubes
  3. 1 1/2 cupuncooked white rice, I use basmati
  4. 3/4 cupbeer, I use a light color beer
  5. 3/4 cupchicken broth, if you do not wish to use alcohol double the broth
  6. 4 ozof pimento with liquid
  7. 1 1/2 cuppimento stuffed green olives
  8. 1 mediumonion, chopped
  9. 2 tbspachiote oil or olive oil
  10. 4 cloveof garlic, minced
  11. 1 tspsmoked spanish paprika
  12. 1 1/2 tbspof salt
  13. 1/8 tsptumeric

Cooking Instructions

30 mins
  1. 1

    In large skillet on medium heat, saute chicken in achiote oil until browned about 10 minutes.

    Add in garlic and onion and cook another minute.

  3. 3

    Add pimento, olives and rice plus seasonings. cook 2 more minutes.

  4. 4

    Add beer and broth and cover, reducing heat to low. Simmer for 20 minutes or until rice is tender.
