This breakfast muffin is super easy to make and is very tasty. A great way to set up an on the go breakfast for the week.

Preheat oven to 375.

Add eggs to a mixing bowl and beat.

Add in veggies.

Spray cupcake tins with non stick cooking spray generously.

Using a ladle pour one scoop into each tin.

Top each cup with a generous pinch of cheese, roughly 1 tablespoon each. Add a pinch of pepper to each to top it off.

Bake for 18 to 20 minutes, or until muffins are set and are lightly golden. They will puff in the oven, but sink upon cooling. Allow muffins to cool in pan for about 10 minutes before removing.
