Heat oil in large pot over medium-high heat. Saute onions for 5 minutes.

Stir in remaining ingredients except parmesan cheese, and bring to boil
- 3
Reduce heat, cover and lightly boil until sweet potatoes are soft. Approximately 12 to 15 minutes
- 4
Sprinkle bowl of soup with parmesan cheese and serve.
