  1. 2 largeSkinless chicken breasts
  2. 1 largeBaker potato (skin on - cut into chunks)
  3. 1 cupBaby carrots - whole
  4. 2 tbspFreshly chopped chives
  5. 2 tbspFreshly chopped rosemary
  6. 1 tbspFreshly chopped thyme
  7. 1 dashSmoked paprika (for each breast)
  8. 1 tspDry rosemary
  9. 1 tbspRed pepper flakes
  10. 2 tbspCourse ground fresh cracked pepper
  11. 1/2 cupLow sodium chicken stock
  12. 1/2 stickunsalted butter

Cooking Instructions

    Pre heat oven to 350°F

  2. 2

    Place chicken breasts in a 7½ x 11" baking dish and surround them with carrots and potato chunks

  3. 3

    Sprinkle all herbs and spices evenly over entire dish

  4. 4

    Slice butter into ¼" slices and place throughout dish.

  5. 5

    Gently pour chicken stock into dish making sure not to wash off seasoning.

  6. 6

    Cover with tin foil and bake for 50 - 70 minutes
