  • 3 smallzuccini
  • 3 smallyellow squash
  • 1 smallyellow onion
  • 1 mediumtomato
  • 1green chili pepper

Steps

30 mins
  1. 1

    Slice squash and zuccini in thin slices about 1/4 inch thick

  2. 2

    Dice tomato and onion

  3. 3

    Chop chilli pepper

  4. 4

    Place all veggies in 4 quart saucepan, cover with water

  5. 5

    Simmer on medium heat for 20 minutes or until veggies are fork tender.

  6. 6

    Serve and enjoy.

This is also know as Calabacitas, which is a common New Mexican dish. Add corn for a little extra texture.
