Ingredients

  • 1 cupdried black-eyed peas
  • 4 cupwater
  • 3 tspsalt
  • 4 slicebacon, cut into 1 inch pieces
  • 1 mediumonion, chopped
  • 1green bell pepper, chopped
  • 1 tsppepper
  • 1 tbspminced fresh parsley
  • 1 cupuncooked long grain white rice
  • 1 can(14 1/2 ounces) whole tomatoes with liquid, chopped
  • 4 cupwater

Steps

    Cover peas with water.

  2. 2

    Allow to soak several hours, or overnight.

  3. 3

    Drain peas.

  4. 4

    In a large saucepan, combine peas with water and salt.

  5. 5

    Simmer over medium low heat 1 hour, or until peas are tender.

  6. 6

    Drain peas, reserving 2 cups liquid.

  7. 7

    Saute' bacon, onion, and bell pepper until bacon is crisp.

  8. 8

    DO NOT DRAIN.

  9. 9

    In a 2 quart saucepan, combine peas, reserved liquid, the saute' mixture, rice, pepper, parsley, and tomatoes.

  10. 10

    Cover and simmer 1 hour, or until liquid is absorbed and rice is thoroughly cooked.

  11. 11

    *This recipe makes about 9 cups of Hoppin' John.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
