I developed this while trying to emulate Chipotle's Burrito bowls. It's not the same, but I love it. Anytime I make it for guests they ask me for the recipe, so I'm sharing it. Hope you all enjoy!!

Ingredients

30 mins
8 servings
  1. 2large Chicken Breast
  2. 2large Cans of Diced Tomatoes
  3. 2Jalapeños(or any other peppers to taste)
  4. 2 tbspSalt
  5. 2 tbspChili Powder
  6. 1 tbspCumin
  7. 1 tbspBlack Pepper
  8. 1 tbspGranulated Garlic
  9. 2medium Diced Onions
  10. 1 bunchCilantro(Optional)

Cooking Instructions

30 mins
  1. 1

    Blend 1 can of the tomatoes in a blender and pour into crock pot.

  2. 2

    Add the onions, jalapeños and spices

  3. 3

    Pour the other can of diced tomatoes and mix all the ingredients well.

  4. 4

    Bury the chicken, and cook in the crock pot on high for 3-4 hours and mix occasionally.

  5. 5

    Remove the chicken and shred with a fork and return to the crock pot. Season to taste. The spice measurements that work for me, but are just estimates.

    Serve over rice or in a tortilla with sour cream and cheese.

  7. 7

    If you want you can use the same recipe with beef. Just season, and brown the beef in a frying pan then place in the crock pot.
