Everyone who has ever had this soup loves it. Make it just like I say at least once. If you modify it, keep it to yourself; it would break my heart to know 😉

Simmer first four ingredients over medium-low heat for a few minutes until onions are translucent. (Fresh green chilies are amazing but often add too much heat so be careful that they are mild if you use fresh.)

Add chicken, chicken broth, chopped tomatoes, and canned corn. ( this is the only thing I use canned corn for, you can use fresh or frozen but canned corn is sweeter so it is recommended)

Cover and Simmer for 30 minutes

Add cilantro and cumin. Simmer for 10 more minutes.

Place a handful of chips in a bowl, top with perhaps a couple tablespoons of cheese, and ladle soup over chips. ( I eat mine without cheese to cut calories, but the cheese makes it simply decadent)

Garnish with avocado and/or sour cream if desired. Add lime wedge and serve.

Every ingredient is crucial. If you don't like cilantro make a different recipe. I have never modified this recipe; it is simply too perfect as is.
