Ingredients

  1. 1 lbfresh chorizo
  2. 1 lblean ground beef
  3. 1onion, chopped
  4. 3peppers, diced (3 different colors)
  5. 1 canenchilada sauce (28 ounces)
  6. 2 canMexican tomatoes with Chili's (7 ounces)
  7. 2 cantomato paste
  8. 1black pepper
  9. 1salt
  10. 2garlic cloves
  11. 1Mexican oregano
  12. 1cilantro
  13. 1ground cumin
  14. 2 tbspagave nectar
  15. 1 packageslasagna noodles
  16. 1/2 cupwater
  17. 12 ozmozzarella cheese
  18. 16 ozricotta cheese
  19. 1egg
  20. 1/2 cuparugula
  21. 1/2 lbcotija cheese crumbled
  22. 1/2 lbMonterey Jack cheese grated
  23. 1/2 lbgrated parmesan cheese
  24. 1sour cream
  25. 2tomatoes
  26. 1 canchopped, black olives
  27. 1pepper mild to hot

    Brown meats with onions

  2. 2

    Add peppers and cook until simi-soft.

  3. 3

    Add the tomatoes, water and seasoning. And simmer for at least 2 hours.

    Prepare the lasagna noodles per package instructions.

  5. 5

    Mix ricotta cheese with egg and the minced arugula

  6. 6

    Combine Monterey Jack, cotija and parmesan cheese into a three cheese blend.

  7. 7

    In 9 by 13 baking dish put 1/4 quarter of the meat sauce.

  8. 8

    Place 1/3 of the noodles on top of meat sauce. Followed by 1/2 of the ricotta mixture and 1/2 of the mozzarella.

    Add 1/4 of the meat sauce.

  10. 10

    Sprinkle with a 1/4 of the cheese blend.

  11. 11

    Repeat steps 8 through 10

  12. 12

    Place last layer of noodles, and the last of the meat sauce followed by the remaining 3 cheese blend.

    Cover and bake a half hour in a 370°F oven covered.

  14. 14

    Let rest for 20 minutes and top with sour cream, fresh chopped tomatoes, chopped olives, pepper and some sprigs of fresh cilantro.
