Ingredients

  • 1 tbspolive oil
  • 1white onion- finely chopped
  • 4 clovegarlic- crushed
  • 1 cancrushed tomatoes, drain most of the fruid
  • 3/4 cupdry white wine
  • 2 lbuncooked deveined large shrimp
  • 1/4 cupcoarsely chopped fresh oregano
  • 1/4 cupcoarsely chopped fresh parsley
  • 6 ozfeta cheese, crumbled

Steps

  1. 1

    Heat oil in a large OVEN-PROOF skillet. Add onion and garlic and cook until onion softens.

  2. 2

    Add tomatoes and wine. Bring to a boil then cover it and let it simmer about 10 minutes, stirring occasionally.

  3. 3

    Leaving shrimp tails intact, add them to the skillet along with parsley and oregano.

  4. 4

    Preheat broiler while shrimp cooks covered for about 10 minutes, stirring occasionally.

  5. 5

    Sprinkle cheese over shrimp mixture and place under broiler until cheese browns lightly.

This is so good! Also try using fresh dill instead of oregano, many versions use dill.
