A very easy lunch, and its one of my favourite chicken sandwiches!
Steps

Add olive oil to your pan on low heat, season your chicken with thyme, salt and pepper, add to the pan and put the lid on.

After about 6-7 minutes remove the lid, turn up the heat to high, and fry till its golden brown on one side, flip and add the cheddar slices, after the other side is cooked remove the chicken and place on a plate

Toast your pita bread, slice in half and place one breast in each one, then add slices of your fresh cucumber and tomato

Optional: you can mayo to it too, enjoy!!
