  1. Carrots
  2. 2carrots, sliced
  3. 1 1/2 tbspunsalted butter
  4. 1 1/2 tbsphoney
  5. Corn Salsa
  6. 1 smallonion, sliced
  7. 1/2yellow pepper, chopped
  8. 1 stickcelery, thinly sliced
  9. 2 tbspunsalted butter
  10. 1/2 cupdry white wine
  11. 1inch ginger, grated
  12. 1/2corn on cob, kernels separated
  13. 2 tbspolives and palmettos
  14. 1 stickscallion, sliced
  15. 1roma tomato, diced
  16. 1 bunchflat parsley, chopped
  17. 1 clovegarlic, minced
  18. Fish
  19. 2mahi mahi fillets
  20. 1 tspsalt
  21. 1/2 tsppepper
  22. 2 tsppaprika
  23. 1/2 tspgarlic powder
  24. 1/2 tsponion powder
  25. 1 tspginger powder
  26. 2 tbspolive oil
  27. 1lemon, sliced
  28. 1 buncharugula
  29. 1 tbspvinaigrette

Cooking Instructions

    Heat sauce pot on medium. Add butter...once melted add carrots and cook until tender. Add pinch of pepper along with honey. Stir to mix then place carrots to side but keep same pot for next step.

    Sweat hard veggies on low heat with just enough oil to keep from sticking...Afterwards, in hot sauce pot add butter and melt. Then add veggies along with gatlic and ginger. Sautee for 1 minute then add wine. Reduce by 2/3...Add soft veggies and cook for another minute.

    Season fish. Heat pan on medium high. Add oil..Add fish.. cook each side for 60-90 seconds

    Sautee lemon rings with pinch of salt.

    Mix arugula and vinaigrette together.

    place arugula on center of plate. Place fish fillet on top of arugula. Pour corn salsa on top of fish. Add side of carrots and side of lemon rings.
