Cooking Instructions

Mix the milk at room temperature with the yeast, in another bowl add the eggs and sugar and beat with a wooden spoon slowly add the cardamom, butter, salt. Incorporate everything into a homogenous dough.

Let the dough stand until it doubles in size (aprox. 45 min-1hr)

Spread the dough and add the fruit (blueberry-sugar-orange zest mix) and roll until the fruit is mixed with dough. Proceed to cut into small rolls.

Line on a greased cookie sheet a few inches apart and cook at 350°F for 20 minutes

I saw a really cute sweet the other day... a bear shaped macaron. It was so cute I wanted to make one myself, but I've never made macarons and they seem difficult. So I decided to make bear shaped buns instead. (Translator's note: In Japanese, both names are puns: the bear (kuma)-shaped macaron was a 'kuma-caron', and the bear-shaped bun (manjuu) is a 'kuma-njuu'.)The amount of milk to add to the pancake mix may differ depending on the brand. When adding more milk after the first tablespoonful, add by droplets. Knead the dough well, when it's smooth and not sticky it's OK. If the dough cracks when you flatten it, add a bit more milk. I had some white sandwich cream cheese and cranberry bread when I was back home in Japan and it was delicious, but when you sliced it, some parts were full of cream cheese while some parts had none, so I made them into buns instead. The version I had was made with white flour only, but I used half whole wheat and half white flour.You can mix all the dough ingredients together and leave it to rise for 1 hour before going to step 4. I used 500 g of flour this time, and made plain rolls out of 300 g worth and these cream cheese-cranberry buns out of 200 g worth. I use pre-portioned cream cheese that comes in 20 g portions (since it's convenient) but you can just cut up a block of cream cheese instead.In step 4, if you put the cranberries and the cream cheese on the inside of the dough only, they won't get burned during baking.
