If you buy frozen whitebait you won't have to clean it, if you buy fresh then you can ask your fisherman to clean it for you.
If you decide to clean it by yourself, then with your hand cut the head and take of the inner belly of whitebait.

Ingredients

  1. 500 gramswhitebait
  2. 4 tbsporegano to taste
  3. 1olive oil, for frying
  4. 1salt to taste
  5. 1fresh lemon juice

Steps

  1. 1

    Wash whitebait and put in a strainer. Spread salt and leave aside until olive oil is ready.

  2. 2

    In a pan put olive oil, when ready put whitebait. Fry 10-15 minutes or more if you want it crispier.

  3. 3

    Serve in a plate. Spread oregano and as much of the fresh lemon juice you want.

  4. 4

    It's better when you eat it warm.
