I made pizza for the kids the other day and had half a pan of marinara sauce left over. I also had a bag of bean sprouts in the fridge that needed using so I though, why not combine the two? I came up with a low carb Asian meets Italian dish that you definitely won't miss the pasta in! I hope you try it!

Ingredients

  1. 'Pasta'
  2. 1 tbspolive oil / low cal spray oil
  3. 320 grams (4 cups)bean sprouts
  4. 120 grams (2 cups)chopped mushrooms
  5. 2 clovegarlic
  6. salt & pepper
  7. Marinara Sauce
  8. 3 tbspolive oil / low cal spray oil
  9. 2 1/2 tbspfinely chopped onion
  10. 400 gramscan chopped tomatoes
  11. 50 mlwhite wine
  12. 6 tbsptomato paste / puree
  13. 2 tbspfreshly chopped basil
  14. 1/2 clovegarlic, finely chopped
  15. 1/2 tspdried oregano
  16. salt & pepper
  17. sweetener / sugar

Cooking Instructions

    Start by making a puree of the canned tomatoes, wine, tomato paste, garlic and oregano

  2. 2

    Heat the oil in a pan and gently fry the onions until softened, then add in the tomato sauce and basil and let simmer for 30 minutes

  3. 3

    When the sauce is almost ready, heat the 'pasta' oil in a frying pan and add the chopped mushrooms and bean sprouts

  4. 4

    Stir fry on a high heat for 3 minutes then add the garlic and cook a further minute

  5. 5

    Season the marinara with salt & pepper and a little sugar if required to taste, then spoon some sauce over the top of the 'pasta' and serve with some garlic bread. My marinara recipe is also used within the one for my pizza potatoes, linked below
