Ingredients

  1. 1 packagesMelissas Extra Firm Tofu
  2. 1/2 cupSpinach
  3. 1 cupZucchini
  4. 3 cupCabbage
  5. 2Potatos
  6. 2 cupVegetable broth
  7. 1Habanero Pepper
  8. 1Jalapeño Pepper
  9. 29 ozcan Tomato Sauce
  10. 1 tbspEarthBalance (extra virgin olive oil blend) vegan butter
  11. 2 tbspRealLemon Juice
  12. onion powder
  13. garlic powder
  14. oregano
  15. basil
  16. greek blend seasoning

Cooking Instructions

  1. 1

    Prepare tofu: cut tofu into slices.. and press for 45 minutes to remove excess water. peel potatos.

    Cut up the zucchini, cabbage, and potato

  3. 3

    In a blender or food processor pureé the tofu, spinach, zucchini, cabbage, potato, broth, habanero pepper, jalapeño pepper, and RealLemon Juice.

    Add blended ingredients to crockpot, then add the tomato sauce, earthbalance butter, basil, oregano, greek blend seasoning, garlic powder and onion powder.

    Cook for 4 to 5 hours or until done.

The stuff i cook is vegan, and do substitute to what i eat, because of allergies etc some may be old. i am on a rx meal plan not allowed to use food with lactose/treenuts.
