Ingredients

4 servings
  1. 2 cupmilk
  2. 1 1/3 cupflaked coconut
  3. 2 cuphot, strong, brewed coffee
  4. 1/4 cupimitation rum extract
  5. 1Whipped cream (optional )
  6. 1Toasted coconut (optional )

Steps

  1. 1

    In a saucepan, combine milk and coconut. Heat over medium -low heat, stirring occasionally, until mixture steams.

  2. 2

    Pour hot milk mixture into container of electric blender. Cover and blend on high speed until smooth. Strain.

  3. 3

    In same saucepan, combine strained milk and hot coffee; heat thoroughly, but do not boil. Remove from heat; stir in rum extract.

  4. 4

    Pour into heat-proof glass or coffee cup. Top each serving with whipped cream. Sprinkle toasted coconut. Serve immediately.
