Blend the ham.

Add the sandwich bread, Parmesan cheese, and egg. (I make these croquettes for my child, so I don't add salt since both the ham and Parmesan are already salty enough. If you prefer, you can add a pinch of salt.)

Shape the mixture into small, round croquettes.

Coat the croquettes in breadcrumbs.

Drizzle a little extra virgin olive oil in a skillet.

When the oil is hot, lightly brown the croquettes on both sides.

Finish cooking in a convection oven for 5 minutes at 400°F (200°C).
