Ingredients

  • 4 cupcold cooked rice or left over rice
  • 1 1/2 tbspgood quality shrimp paste
  • 4 clovegarlic
  • 1 tbspsugar
  • 1 tspblack pepper
  • 2 tbspoil to fry rice
  • side dish1 omelet
  • 4eggs
  • 1/3 tspeach salt and pepper totaste
  • side dish2
  • 1/2 cupdry shrimps,large size
  • side dish3
  • 4chinese saussage
  • side dish4 sweetens pork
  • 400 gramspork or pork belly,sliced
  • 2 tbsppalm sugar
  • 1 tspsugar
  • 1 1/2 tbspsoy sauce
  • 1 1/2 tbspoyster sauce
  • 1salt and pepper to taste
  • side dish5 seasoningand vegetables
  • 3lime,cut 6 each use to squeez to rice before eat
  • 3cucumber,slice
  • 1green mango ,sour taste needed
  • 100 gramshot chili,chopped optional
  • 5salted eggs / quartered
  • 5yard long beans,sliced
  • 1coriander or dills to garnish

Steps

  1. 1

    Prepare side dish ingredients,sliced chinese saussage,fry on low heat until crispy and turn reddish ,set aside..option.. you can bake it

    Prepare eggs,crack,beat,seasoning,fry on medium until cook,let it cool ,slice to thing threads,set aside

  3. 3

    Prepare sweetens pork,dissolve palm sugar,mix sugar,add water,simmer until shinny,add pork,lets it glazed pork,let cool ,set aside

    Cut,chop,slice side vegetables

    Cook rice,crush garlic and dry shrimps ,fry until almost golden,add shrimp paste ,stir until it turn reddish,dont let burn,add rice,seasoning,stir to mix evenly ,heat off

  6. 6

    To serve: set fried rice on serving plate,surround with all side dish,before eat squeeze lime juice ,this menu is quite a lot work to do ,so not every restaurant have it ,dont be afraid of shrimp paste smell,because when you do it right way its smell so good and great taste too :)
