Ingredients

  1. 800 gramsgreen tomatoes chopped roughly
  2. 400 gramsonions chopped
  3. 100 gramssultanas or raisins
  4. 200 gramsdates stoned and chopped
  5. 1apple (200grams)
  6. 190 gramsstem ginger in syrup chopped
  7. 4bananas peeled and sliced
  8. 500 gramsmuscovado sugar
  9. 100 gramsgolden caster sugar
  10. 50 gramssalt
  11. 2 tspcayenne pepper
  12. 1250 mlvinegar (I used spiced pickling vinegar)

Steps

  1. 1

    Cook tomatoes apple onions raisins dates ginger and bananas in 250ml of the vinegar and the syrup of the preserved ginger. Cover with lid.

    Add spices sugar and rest of the vinegar and simmer slowly in the open pan until thick consistency.
