Ingredients: 800 grams green tomatoes chopped roughly; 400 grams onions chopped; 100 grams sultanas or raisins; 200 grams dates stoned and chopped; 1 apple (200grams); 190 grams stem ginger in syrup chopped; 4 bananas peeled and sliced; 500 grams muscovado sugar; 100 grams golden caster sugar; 50 grams salt; 2 tsp cayenne pepper; 1250 ml vinegar (I used spiced pickling vinegar)

Steps

Cook tomatoes apple onions raisins dates ginger and bananas in 250ml of the vinegar and the syrup of the preserved ginger. Cover with lid.

Add spices sugar and rest of the vinegar and simmer slowly in the open pan until thick consistency.

Pot seal and label.
