Preheat your over to 400°F. Crack eggs in a bowl and whisk in the milk, salt, cayenne and black pepper.

Heat a non stick skillet and add the butter, sauté the onions, scallions and mushroom for a minute then add the spinach and cook for another 30 seconds

Pay a loaf pan with Pam and pure your egg mixture in
- 4
Pure all the spinach mixture into the eggs and give it a slight stir
- 5
Bake for 10-15 minutes or until the top of the egg loaf start to brown.

You can add cheese if you want it to taste more like a quiche
