Growing up, my mother used to make Polichinki for my brother and I all the time for breakfast, as her mother did for her and her siblings. The original recipe, although delicious, isn't what I would consider "healthy" in the least. That's where this healthier version comes in.

Growing up, my mother used to make Polichinki for my brother and I all the time for breakfast, as her mother did for her and her siblings. The original recipe, although delicious, isn't what I would consider "healthy" in the least. That's where this healthier version comes in.

You will need a mixing bowl (preferably one with a lid if there will be leftovers), a frying pan, a spatula, and a spoon.

Measure out each ingredient (except the cooking spray) into the mixing bowl, and using a mixer, combine them until fully mixed and smooth. The batter may seem a little liquidy.

Spray the frying pan with the cooking spray, covering enough so that the polichinki will not stick and turn it on to low heat.

Pour the batter (roughly 1/2 cup) into the lightly heated pan.

Don't flip the cake until the side visible to you is almost cooked through.

Flip the cake over and continue to cook for a minute or two until cooked through.

Remove from pan and add your choice of toppings (fruit, cream cheese, syrup, etc).

Refrigerate leftover.
