Ingredients

  1. 6 ozChicken breast, cubed
  2. 1 largeCarrot
  3. 1 eachGreen and red bell pepper
  4. 1 stickCelery
  5. 1 tspJerk seasoning (or to personal taste)
  6. 2 tbspOlive oil
  7. 1Salt and pepper

Cooking Instructions

    Combine chicken with jerk seasoning and salt to taste. Cover and let marinate for 15 minutes.

    Wash and slice vegetables. Any combination of vegetables work well. You just have to know how fast each cooks.

    Heat oil in a nonstick skillet on medium heat. Add chicken and cook until center is no longer pink.

    Add carrots and celery to the pan and cook for another 2 minutes. Then add the peppers and let cook for another 2 mins.

    Season with more salt if needed and pepper to taste. Turn off heat and enjoy! Please note that cook times may vary for different vegetables. The result you want to get should be crisp tender vegetables and moist juicy chicken.
