Heat ghee in a kadhai.

When ghee is hot enough add the grated lauki to it and fry it on medium flame till all the moisture evaporates.

When the lauki is fried, add sugar to it.

Cook it till it changes the colour

Now, add mawa to this mixture and cook this on low flame.

Cook till it leaves the sides of kadhai.

Now add cardamom powder, food colour and rose essence.

Switch off the flame and transfer the mixture into a greased tray. Add the chopped nuts to it and let it set for 2 hours.

After 2 hours, cut the burfi in desired shapes and serve it.
