Ingredients

12 servings
  1. potatoes
  2. 500 gramspotatoes
  3. 1boiling water to cook potatoes
  4. tempering
  5. 1/4 tspmustard seeds, black
  6. 5curry leaves
  7. 1/4 tspturmeric powder
  8. 1 tspginger paste
  9. 2 1/2 tspminced garlic
  10. 1 tspcilantro finely chopped
  11. 2 tspoil
  12. 1salt to taste
  13. 3green chilies finely chopped/ or half teaspoon red pepper flakes
  14. 1/3 cupsliced green onion
  15. batter
  16. 200 gramsgram flour
  17. 1water as needed
  18. 1/4 tspground cumin
  19. 1 pinchbicarbonate soda
  20. 1/2 tsphot oil
  21. 1 pinchsalt
  22. 1/2 tspcheyene pepper powder or red pepper flakes

Cooking Instructions

  1. 1

    Boil potatoes till tender lightly mash set aside

  2. 2

    Heat oil add mustard seed when they crackle add curry leaves

  3. 3

    Add the rest of the tempering ingredients except cilantro cook 3 minutes but dont let the mixture burn

  4. 4

    Add the tempering to the mashed potatoes, along with the chopped cilantro

  5. 5

    Form tempering and potatoes Into golf ball sized balls set aside

  6. 6

    Mix batter not thick and not thin at the end of ingredients add bicarbonate at the end when batter is right adding hot oil lastmix quickly

  7. 7

    Heat oil for deep frying

  8. 8

    dip each ball in the batter and deep fry until golden brown in color.
