Dry chili Mushrooms

Ingredients

  1. Batter
  2. 6 tbspall-purpose flour
  3. 3 tbspcornflour
  4. 1/4 tspground black pepper
  5. salt
  6. water, to make a medium consistency batter
  7. Mushrooms
  8. 250 gramswhite button mushrooms
  9. 1 mediumonion, or 1 to 2 spring onion whites, reserve the greens for garnish
  10. 2-3Chilis, slit in half
  11. 1 smallbell pepper, chopped in squares (optional)
  12. 7-8 clovesgarlic, finely chopped or diced
  13. 1 inchginger, finely chopped, I used ground ginger
  14. 1 tbspsoy sauce
  15. 1/2 tbspany vegetable oil
  16. 1/2 tspcorn flour
  17. 1 tspwater
  18. 1/2 tspsugar
  19. Salt
  20. ground black pepper
  21. oil, for frying

Cooking Instructions

    Rinse and wipe dry the mushrooms. Trim the stalks down and then either cut in half or quarter depending on the size of the mushrooms.

    For the batter add all the listed ingredients. Mix well until all combined.

    Heat a wok with the oil.

  4. 4

    Next dip each mushroom piece into the batter. Coat well.

  5. 5

    Add the mushrooms to the hot oil and fry until they are golden brown and crispy. You have to fry the mushrooms in batches.

    As you go along cooking place the mushrooms on a plate lined with kitchen towels to drain off any excess oil.

    In another wok or pan.

    Add the ginger, onion, garlic and green Chili's. Stir fry on a high heat till the onions start getting browned around the edges.

    Then add the soy sauce, sugar, salt and pepper. Stir fry for half a minutes.

    Then add the fried batter coated mushrooms and stir over a low to medium heat.

    Sprinkle 1 teaspoon of water and 1/2 teaspoon of corn flour on the mushrooms.

    Sauté for a minute or two and continue to stir.

    Remove from the heat and serve immediately.
