A yummy warning soup, great for leftover veg! I prefer to use the veg listed, but so long as you keep the veggies fairly green it should still work flavour wise.
Sophie's easy crock pot nutmeg veg soup
A yummy warning soup, great for leftover veg! I prefer to use the veg listed, but so long as you keep the veggies fairly green it should still work flavour wise.
Cooking Instructions

Turn your slow cooker onto low, and add the stock and garlic puree.

Chop all your veggies and slow cook for around 6 hours.

Blend your veggies up, and add your cream cheese. Blend again until smooth.

Grate about 1/5 of a nutmeg (or about 1/4 teaspoon ground nutmeg) into your soup. I advise adding it gradually and testing until you are happy with the flavour.

Serve and enjoy! For extra creaminess, add a swirl of creme fraiche or quark to the top when serving.

Veggie soups are so easy. There are hundreds to choose from and probably hundreds more yet to be invented. This is just my basic idea of a quick throw together soup. It will help you clear out any left over veggies and is a fun shopping trip to the markets to put it together. I make it because I work shifts so it is a good quick brekky and later at night an easy and tasty meal. It also is very weight concious. I love soups. When making anything, I try to use as much fresh as possible. Especially Vegetables. Vegetable soup is one of my favorites. I would love to be able to always have it made so I could grab a soup mug or bowl full whenever I like. I always make 5-7 quarts of soup. I keep some out, place some in sandwich Ziplock baggies.
