Recipe has been in my family for years. My great aunt lived in Miami and when we visited, we would pick the lemons from the tree in her backyard and she would make the lemon curd and make lemon tarts. I watched my grandmother and mother do this for every holiday and now I do the same : ) I spread it on toast too

Place lemon juice, zest, butter and sugar in pan on low. Stir until butter is melted and sugar is dissolved.

Beat eggs in a separate bowl. Slowly add to lemon mixture (do this slowly or you'll have scrambled eggs) stirring constantly with wooden spoon. Stir occasionally until it thickens and coats the spoon. Transfer to a bowl or jar.
