Ingredients

  1. 250 gramsmushrooms, chopped
  2. 1 1/2 cupinstant couscous (about 150g)
  3. 6 smalltomatoes, sliced
  4. 1/2a jar olives, halved
  5. 1crumbled feta cheese
  6. Seasoning
  7. 1splash olive oil and balsamic vinegar
  8. 1salt, ground pepper, dried basil, rosemary, oregano, mint, sweet paprika, chili flakes OR mediterranean herb mix
  9. 10fresh basil leaves, chopped

Steps

  1. 1

    Heat some oil in a big pan or skillet over high heat. Add sliced mushrooms and fry until golden brown

    Add about 3 cups of water to the same pot and bring to the boil. Then, add couscous

  3. 3

    Next, cover with a lid reducing the heat to low until couscous is cooked (should take only a couple of minutes). Fluff up with a fork and take off heat

  4. 4

    Add halved olives, sliced tomatoes, crumbled feta and seasoning listed above. Enjoy :)
