Ingredients

6 servings
  • 2ears corn
  • 2 tbspvegetable oil
  • 1red onion, finely diced
  • 1juice of 1 lime
  • 1/4 cupchopped cilantro leaves
  • 1salt to taste
  • 1pepper to taste
  • 1serrano chile, finely chopped
  • 2ripe avocados, peeled, pitted, and diced
  • 1blue, yellow, or white tortilla chips for dipping

Steps

    Preheat the grill.

  2. 2

    Remove the outer husk from the corn and loosen the silks without removing.

  3. 3

    Dunk ears into water and then place them directly onto a hot grill for 15 minutes, turning occasionally.

  4. 4

    Remove from grill.

  5. 5

    Remove remaining husks and silks and cut the kernels off the cob.

  6. 6

    In a bowl, combine corn, oil, avocados, serrano chile, onion, lime juice, and cilantro.

  7. 7

    Season with salt and pepper to taste and serve with tortilla chips.

  8. 8

    *Dunk the corn in water before putting it on the grill to make sure that the husk and silks don't burn while the corn steams.*

  9. 9

    **The corn is done when you start to see the outline of the kernels showing through the husk.**

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
