Ingredients

1 hour 30 mins
12 servings
  • 1 1/2 cupflour
  • 1 tspground ginger
  • 1 1/2 tspbaking powder
  • 1/4 tspsalt ( i use sea salt)
  • 1 cupgranulated sugar
  • 1/4 cupvegetable oil
  • 2eggs
  • 1grated peel from lemon
  • 1 cupshredded fresh zucchini
  • 1 candrained pineapple tidbits

Steps

  1. 1

    Preheat oven to 350°F. Lightly grease loaf pan ( I used mini bunt pans this time)

  2. 2

    In large bowl, combine flour, ginger, baking powder, salt and sugar and mix well.

  3. 3

    Add oil, eggs, lemon peel, zucchini and pineapple. Stir to combine. Do not over mix it should be smooth.

  4. 4

    Pour batter into prepared pan. Bake 50-60 min. Turn out bread and cool completly .
