Optional, add 2 Tbs. chopped parsley to dough

Mix flour, salt and nutmeg (and parsleyif using). add milk and eggs; stir to combine. let rest 15 minutes.

Heat pot of lightly salted water and drop dough into water in small droplets. I use a collindar and push the dough through in small droplets. Cook till dough floats, about 4 minutes.

lightly saute spaetzle in browned butter. Serve hot.
