Ingredients

15 mins
  1. 600 gramsmango
  2. 3 cuplight brown sugar muscavado
  3. 1 cupcider vinegar
  4. 2 eachkashmiri chillis
  5. 1 clovegarlic
  6. 15cm ginger
  7. 5 eachcardamom pods
  8. 1 1/2 tspcorriander seeds
  9. 1 1/2 tspsalt
  10. 1 eachbay leaf

Steps

15 mins
  1. 1

    cut mango into chunks add to pan along with cider vinegar cover and cook on a low heat for 10 mins .

  2. 2

    slowly bring to the boil and add all remaining ingredients .

  3. 3

    simmer and cook for 30 mins until thickened and syrupy

  4. 4

    add to a sterilized glass jar and store for 1 week before use .
