combine cheese, flour, and a pinch of red pepper in a large bowl. beat egg whites at high speed until stiff peaks form. fold into cheese mixture. roll the mixture into balls. then roll the cheese balls into the crushed crackers. place balls on a tray cover and chill for approx 8 hours.

pre heat 1 inch of oil into a Dutch oven at 375°. when the oil reaches the proper temperature, place cheese balls into oven in batches until they are golden brown. usually 3 to 4 mins. drain and place on a paper towel. makes up to 20 cheese balls
