Ingredients

  1. Sweet Potatoes
  2. 6 lbsweet potatoes
  3. 1lemon zested and juiced
  4. 3 tbsppure maple syrup
  5. 2 tbsplight brown sugar
  6. 3 tbspbourbon
  7. 8 tbspbutter at room temperature
  8. 1 1/2 tspsalt
  9. 1 tspwhite pepper
  10. 1pecan crumble topping is optional
  11. Pecan Crumb Topping
  12. 1/2 cupall pupose flour
  13. 1/4 cuplight brown sugar
  14. 1 tspsalt
  15. 1/2 tspground white pepper
  16. 1 pinchdried thyme
  17. 1/2 cupchopped pecans
  18. 5 tbspbutter chilled and cut into bits

Steps

  1. 1

    Place sweet potatoes on foil lined baking sheet and roast 45 minutes to 1 hour at 375 until very soft to touch.

    Remove from oven and let cool 20 minutes

  3. 3

    Whn cool enough to handle peel by hand and then put flesh in bowl of mixer

  4. 4

    Use paddle attachment, mix in lemon zst and juice, maple syrup and brown sugar.

  5. 5

    Place bourbon in small sausepan and place over high heat

  6. 6

    Let it come to a boil and then tiltbpan slightly toward you to set aflame

  7. 7

    Add to potatoes with butter

  8. 8

    Mix well

  9. 9

    Add salt and pepper and transfer to a 13 by 9 inch casserole dish

  10. 10

    Recipe can be made to this point up to 2 days in advance and refrigertated

  11. 11

    To make topping, mix flour, brown sugar, salt, pepper, thyme, and pecans together in small bowl
