
Mashed Maple Bourbon Sweet Potatoes. --- 8 to 10 servings
Steps

Place sweet potatoes on foil lined baking sheet and roast 45 minutes to 1 hour at 375 until very soft to touch.

Remove from oven and let cool 20 minutes

Whn cool enough to handle peel by hand and then put flesh in bowl of mixer

Use paddle attachment, mix in lemon zst and juice, maple syrup and brown sugar.

Place bourbon in small sausepan and place over high heat

Let it come to a boil and then tiltbpan slightly toward you to set aflame

Add to potatoes with butter

Mix well

Add salt and pepper and transfer to a 13 by 9 inch casserole dish

Recipe can be made to this point up to 2 days in advance and refrigertated

To make topping, mix flour, brown sugar, salt, pepper, thyme, and pecans together in small bowl
