Ingredients

  1. 1/4 cupchampagne or wine vinegar
  2. 1 tbspdigon mustard
  3. 1 cupVegetable oil Preferably safflower or sunflower oil
  4. 1/4 cupOlive oil
  5. 1 tbspFreshly squeezed lime juice
  6. 1Finely grated zest of 1 lime
  7. 1Coarse kosher salt And freshly ground Black pepper to taste
  8. 1spring mix salad
  9. 1 lbpencil thin asparagus trimmed.
  10. 3 ozparmigiano reggiano cheese
  11. 1/4 cuptoasted hazelnuts coarsely chopped.

Steps

  1. 1

    Whisk together first 7 ingredients and refrigerate until ready to use

  2. 2

    the asparagus can be cooked and assembled with the greens earlier in the day.

  3. 3

    steam the asparagus until tender but still crisp about 3 to 4 minutes. Rinse under cold water to stop the cooking process & set's the color.

  4. 4

    cut each asparagus stalk in half on an angle.

  5. 5

    coarsely shred cheese the course shredding helps it stand up to the assertive dandelion.

  6. 6

    scatter the asparagus over the greens.

  7. 7

    shred the cheese. chop the nuts. make the dressing several hours ahead. sprinkle cheese, nuts, dressing over the salad just before presenting.
