Ingredients

45 mins
  • 12 ozrefridgerated sugar cookie dough, chilled
  • 3egg whites@ room temperature
  • 1/4 tspcream of tartar
  • 3/4 cupsugar
  • 1/2 cuplemon curd or lemon pudding, chilled

    Preheat oven to 350°

  2. 2

    Coat a 24 mini muffin tin w/ PAM

  3. 3

    Place 2 teaspoons cookie dough in each well, pressing up sides to form a cup

  4. 4

    Bake 8 to 10 minutes until edges are golden. Cool 30 minutes in tin

  5. 5

    With electric mixer, beat egg whites until frothy ( 30 sec)

  6. 6

    Add cream of tartar and beat on high

  7. 7

    Gradually add sugar, while mixing, 1 tablespoon at a time until glossy and stiff(3 to 4 min)

  8. 8

    Leaving cups in tin, fill each with lemon and top with 1 tablespoon merangue

  9. 9

    Broil on low until golden( 30 sec to 1 min)

  10. 10

    Remove from broiler and let stand 10 minutes in tin, then gently loosen sides and transfer to serving plate
