Cook pasta

Break the eggs into a wared large shallow bowl

add the cheeses

Warm oil oil in a large frying pan

Add panchetta & saute until starting to crisp - about 4 minutes

Add white wine - cook until reduced by half

Drain pasta - do not rinse - add it to the bowl

Toss quickly (this will heat the eggs & leave a cream coating on each strand of pasta)

Add the pancetta with all of the pan juices

Season with salt and pepper
