Ingredients

10 servings
  • 4eggs
  • 1 cupsugar
  • 1/4 cupcold water
  • 1 tspvanilla
  • 1 cupself rising cake flour
  • 1 tspbaking powder (omit if using self-rising cake flour)
  • 1any flavor jam-- not jelly
  • 1powdered sugar

Steps

  1. 1

    preheat oven to 375

  2. 2

    spray cookie sheet with Pam and cover with wax paper

  3. 3

    seperate eggs into 2 bowls

  4. 4

    beat egg whites till stiff

  5. 5

    combine sugar, water, vanilla, and egg yolk and beat till all sugar is disolved

  6. 6

    add 1 cp unsifted cake flour and beat well

  7. 7

    fold beaten egg whites into batter then pour into cookie sheet

  8. 8

    bake 18 minutes on high rack

  9. 9

    immediately lay cake on clean towel and pull off wax paper

  10. 10

    cover cake with jam

  11. 11

    roll cake with towel around it

  12. 12

    set for a few minutes

  13. 13

    remove towel and place on dish

  14. 14

    sprinkle with powdered sugar
